2. Window: German Christmas Cake (Stollen)

This is one of THE most traditional German christmas delicacies. Stollen tastes slightly like marzipan, and keeps for weeks. Actually, it needs one or two weeks to get really good.

You need:
- 1 kg flour
- 2 yeast cubes
- 1/4 l of milk
- 200 g sugar
- 200g ground almonds
- a couple of drops of bitter almond oil
 - 450g butter
- another  130 g butterand 200g powdered sugar (to really smother the cake in)
     
                                                                    
1. Put on some cool christmas music.

2. Fill the flour into a bowl, form a small depression and put in the yeast, some lukewarm milk and sugar. Let it rest for a while, until the yeast merrily bubbles.

3. Mix in the rest of the ingredients. Let the dough rest for 40 minutes.

4. Put the dough into two or three oiled rectangular baking pans. Bake for 45-55 minutes at 180 -200 °C,

5. Take the cakes out of the oven, let them cool slightly while melting the butter.

6. Take the cakes out of the pans and cover them in a lot of butter from all sides. Afterwards, rub in a ton of powdered sugar (take much more than you think you need, that goes for butter and sugar).

7. Wrap the cakes in aluminium foil and let them rest in a dry place for 1-2 weeks.

8. Enjoy!
